For 4 persons:
400g Farfalle pasta (Penne will also work)
200g smoked salmon
500g fresh cherry tomatoes
Lemon, salt, extra virgin olive oil
In a pan, heat the olive oil, the shallots and the chopped cherry tomatoes and let cook for 10-15 minutes, until the tomatoes become a sauce. Prepare pasta according to package directions. Meanwhile, cut the salmon in small slices, put it in a bowl and add some drops of lemon if you want. Drain the pasta and mix everything in the bowl. Garnish with fresh parsley and serve.
